This is a major problem for most composts – I think the sooner the food is broken down into rich soil, the better – so make sure you have "little bits" of scraps, such as vegetable peelings – and make sure the layers of scraps is thin then cover up with leaves, or grass clippings, or weeds from garden etc. Also, although I don't use it, there are powders you can buy to put on compost to accelerate the decompostion. Also, try and turn the mixture over as much as possible. If there aren't any large chunks of food in, the rats will stay away …. best of luck with this…..
